The tips in this recipe are great for making actually tender liver. Only the milk takes away *as well* much of that liver taste that I actually like, leaving me with a pan of rather bland liver. It's keen if you're trying to become your kids to swallow liver, but every bit someone who actually likes liver, I think I'll forgo the milk next fourth dimension.
01/23/2007
I absolutely loved this recipe! I added a petty garlic to the pan before I fried the onions, and that gave it a actually nice flavour.
03/01/2003
mmmmmm! this realy is the all-time recipe for liver. I had never thought of soaking in milk earlier. When I tried it terminal night it came out fantastic. It was tender, moist and delicious. Not the usual "shoeleather" quality that liver can sometimes take on. Yes I belive this recipe volition convert liver haters into liver tryers.
03/07/2007
Smashing recipe! My husband raved nigh the liver. I was a lilliputian hesitant since I hadn't cooked liver in over 15 years. I used extra virgin olive oil instead of the butter.
04/xviii/2003
I made this concluding night for dinner at the request of my fiance. I have to admit, liver has never been my favorite dish, and I've never made it before, but this recipe was and so easy, and it's truthful, the milk takes out all of the bitter taste. If it was good enough that I cleaned my plate, it deserves 5 stars!!
04/25/2003
it was moist, delicious, and most of all easy easy easy!! i soaked the liver for nearly 30 mins, and i liked liver without soaking it in milk, but i dont think i will e'er eat liver and onions again unless im using this recipe, it was fabled!! cheers

Great recipe overall...love seeing the soaking in milk step similar I accept always washed. I saw Julia Child exercise that years ago and knew how of import information technology is only I am amazed at how many people just fry it correct out of the pack so complain of the strong taste! A great tip by the way, since you are already doing the caramelized onions, practise a huge batch up and make onion marmalade to can a jar or two. Back to the recipe at hand, the merely complaint I accept with the directions is that someone who hasn't cooked liver earlier really needs to sympathise what is washed. Liver is much like steak in that by the time it gets to the completely done phase, it gets tough since it keeps cooking afterwards yous pull information technology off the heat. You really need to pull it off when information technology's still slightly pink and that's if you want it completely washed...we prefer information technology pinkish for tenderness. Also, you need to add the onions dorsum BEFORE it'south done for this aforementioned reason. The time given is actually likewise long...for the average thickness the fashion most is packaged, 4 to five minutes is plenty of fourth dimension in a medium/hot pan. I also recommend adding some garlic pulverization to the flour dredging mixture or some seasoned table salt. To really send this recipe off the charts, make a gravy out of the drippings left in the pan...non also thick, and serve information technology on the side just information technology is crawly poured correct over the tiptop and served with some thick biscuits.

My Dad is a HUGE liver & onion fan and he LOVED this, likewise as the fact that I fabricated it for him. Bang-up recipe, its the same as the one on the package of liver ;)

This rating comes from married man, although I did give it a picayune gustation and I must admit that it was pretty good. He came dwelling house with calves liver, which I've never cooked, so I was happy to find this recipe. I never would accept thought to soak information technology in milk. He absolutely LOVED this "J" and thanks so much!
09/22/2010
This dish was fantastic. I only soaked the liver while the onions cooked as I prefer the strong liver flavor. Later cooking, I added one cup of beef broth to the pan drippings and cooked until the liquid had reduced by a little more than than half. I then added the onions and the liver back to the pan. The remaining liquid thickened nicely to make a succulent gravy. Cheers for this wonderful recipe.
03/27/2011
I've e'er beloved liver and onions when it was made correctly past other people, but I never liked my own. Thanks to this recipe, that has changed. Soaking the liver in milk really did accept out most of the bitterness of the liver. Plus, I was overcooking my liver. Wow, some simple tips that really make all the difference in the earth. With the price of meat escalating these days, cooking cheaper foods competently is a crucial skill. Truth be told, I'd prefer a good calf'south liver to a ribeye any day. Thanks for the help!

Prissy recipe. Have never institute a beef liver recipe that wasn't ameliorate w/calf's liver. Flour mix was a scrap bland, then this time used some garlic powder and hot Hungarian paprika in the flour mix. With a flake more time, I'd endeavour some other spices just was rushed tonight; milk soak about xxx min. merely sufficient. I regard the milk soak as optional for flavor (concur with i reviewer that it sucks a flake too much of the liver flavor out), but REALLY necessary for getting the flour to stick! The "don't turn it" advice is great; I've always stirred and fidgeted with information technology earlier, which messes upward the coating and mushes up the liver. TURN ONCE. Onions were great; tossed in a splash of some white wine for no reason other than I was drinking it - don't think information technology added or detracted! Wife thought it was very good, likewise. We both grew upwardly in very unlike backgrounds - equally huge liver fans. I used to have a pet owl growing up (really) - he liked liver, besides, except RAW. Ewwwwwwww.

My wife used to purchase Liver twice a year (neither 1 of u.s. similar liver) we would eat a picayune of it and toss the balance in the bin. When asked why? she bought it, she replied it had great Iron content. Let me say this and make it crystal clear since finding your recipe, nosotros now have liver every "Week" and there are no leftovers. Thanks for sharing
03/16/2011
I've fixed liver & onions this way for many years. As some others have mentioned, I add together a petty garlic. After the liver is dredged in flour and in the pan and turned the offset fourth dimension, I put most of cup of the left over flour in there ... really! Just dump it in and melt along with the liver and onions. Viola! Yummy gravy. Of course with that great gravy, ane needs homemade mashed potatoes. A perfect meal.

Since my married woman don't like liver, I thought the milk soak would change her mind. Nope, she still didn't care for information technology. And since I grew up eating liver with a strong flavor, the milk soak extracted the flavor I appreciate. However, the temperature guidelines this recipe gave me reduced the temperatures I had been using for the onions and the liver leaving me with a improve texture of both. My 2d endeavour with this recipe, I eliminated the milk soak, seasoned the liver directly earlier breading it instead of adding the seasoning to the flour, and doubled the butter corporeality to go on enough moisture in the skillet to simmer the onions and melt the liver. The end result was the best liver & onions I have always fixed. Adjacent time I'1000 going to try adding a slight amount of cooking oil instead of doubling on the butter. Oh yeah, the liver I cooked with this recipe was venison liver.
07/23/2011
such a great recipe, im non the biggest fan of liver but i went back for seconds

Oh so expert!! We already like liver only this was especially yummy! It was very flavorful and tender. I followed the recipe every bit written exceptI simply soaked it in milk for xxx minutes. I fried some bacon slices kickoff and prepare aside to intermission over the meridian later. I sauteed a couple fresh mushrooms with the onions. The liver, the sauteed onions and mushrooms, and the bacon pieces all piled on a serving platter made for a yummy meal with mashed potatoes, and ketchup on the side for dipping. I followed the proposition to mix leftover flour with water in the frying pan to take advantage of all the flavorful pan drippings and this made a good gravy for the potatoes. I program to repeat this method again!
02/24/2010
I grew up loving liver and onions only was never successful at making information technology until trying this easy recipe. I've fabricated it using both butter to fry in or oil. . . utilize butter, it makes a big deviation! At that place'south cipher quite similar the wonderful sweetness flavor of perfectly carmelized onions every bit a companion to the smashing taste of perfectly seasoned liver. I ever make enough for my blood brother-in-law too since our wives won't cook liver for us. This one'south a keeper!
07/25/2009
Made this tonight. Letting the liver soak in the milk is the central. Wonderful! this recipe is so easy, you lot don't fifty-fifty need to save it. I cooked the liver approx. three mins. each side. I made a gravy with chicken broth, some fat from the pan and flour. I returned the liver to the pan with the gravy simply before serving. I did both onions and salary. Thanks for sharing.
09/xviii/2011
Keen recipe. I am a big liver and onions fan so I'll eat it whatsoever way it comes out, but the milk is magic. It even improved the texture which a lot of people dislike. If you're making liver and onions, this IS the recipe!
02/25/2010
I fabricated this for my Husband and Son terminal nighttime and between the two they ate a whole pound of fried livers and onions. They said it was great.
08/29/2010
This is a great recipe for liver! Learned it from my Russian wife whose female parent makes information technology. The just divergence is that I add a scrap of sour foam subsequently the liver has browned and let it simmer to sense of taste.
01/21/2011
I don't swallow liver, don't care for it but my hubby loves it. I fabricated this recipe for his (without my own tasting) and he LOVED it! I added garlic salt, paprika and pepper to the flour, didn't turn them but once and as well did the bacon with the onions. I did the milk soak for virtually 40 minutes, used beef calves livers. I will definitely brand this again or at to the lowest degree teach him how to make it!
09/xiv/2010
Sorry... this nevertheless tasted like liver to me! Information technology was BAD!!! I soaked it for iv hours with no modify!
01/02/2005
This was my first fourth dimension cooking liver, and this recipe served for a great template. I cooked upward some bacon starting time, and then sauteed the sliced onions in the salary grease. Drained and padded them both with paper towels before warming them back up alongside the liver. Utterly delish.

I am a recently retired butcher, and "fresh" liver is hard to come by these days, so I don't have it very often. With Deer & Elk season in full swing correct now, I am busy helping friends & neighbors with a very bountiful harvest this year, and this recipe is absolutely fantastic with fresh game liver. I've fabricated it 3 times so far. My 78 yr onetime Dad thinks that it is the closest recipe to my tardily Mother's. That is a heck of a compliment coming from him! Thank You!
07/xix/2011

This is the all-time liver dish I have ever tasted! My husband could not end proverb how much he loved information technology. The only thing I inverse was the flour, I used gluten costless and used 1 loving cup. I also added a bit of vegetable goop at the finish, and I was and so glad to merely use a flake, because it would have taken away the crunchy bite the liver had to it. Can't wait to make information technology again! Sandy from Houston

Hi there, I've never fabricated liver before in my life but I had to for my boyfriend because he's having surgery and needs to build up his hemoglobin, so the poor boy needs lots of iron! His mother would brand liver for him once a month as a kid and he thinks it'due south awful stuff. I made him this and he loved, loved loved information technology! It was tender (milk?) and perfect and I even loved it too! The onions made all the difference and I also added a wee fleck of rosemary to the liver (since I was using it in my roasted potatoes) and that was perfect. While I don't think I will e'er be a liver lover, I did want to melt it for my married man considering he loves it. My children who until at present refused to eat information technology because I had never wanted too, loved my "country fried steak"! And even I thought information technology was amend than the rest of the times I've tried it. Their dad asked how they liked the state fried liver and onions and they were a little shocked but decided that they were still crazy well-nigh it! Which is great because it'due south cheap! And we're on a budget! My mother in law told me that that is why she fed my husband and sis-in-law liver and so ofttimes when they were growing up. PLUS, information technology'south good for you. But I however won't eat more than than a bite!

05/xiv/2012
The milk makes the liver smashing. Endeavour buttermilk also...even better. When I use buttermilk I soak all day and periodically pour out the old buttermilk and pour in fresh. Then I employ some of the buttermilk at the terminate to make a pan gravy. Fabulous!
01/17/2010
This was a fantastic recipe! I tried it this night and prepared for 5 children x and under. iv of them devoured it. 3 of them commented "this meat tastes actually good". Definately ane for the recipe book!
04/09/2014

I did add a little olive oil with the butter then that it did non fire, used ruby onions (Vidalia would have worked dandy too) and added a impact of minced garlic to the pan a couple of minutes before serving. If y'all do add garlic exist careful not to add to soon every bit garlic burns quickly. I served the liver with scrambled eggs and new potatos for brunch. Adjacent time I'll serve with sauted Shitake mushrooms as well. This is a great recipe...cheers for sharing.

09/05/2014
No more than xxx minutes milk bath! That way u still get liver flavor!! Likewise, really caramelize onions, that with a Maui Onion gives neat sweetness. Carl
09/01/2013
Couldn't stand liver until this recipe came along! It totally eliminates that nasty bite liver leaves long afterward you lot've eaten it.The only thing unlike I do is stab up my liver one time it'south in the milk, and that seems to work out well.I've let the liver sit down in the milk from x minutes to over nighttime.Doesn't matter how long it sits it does the same job.
02/17/2011
Liver was ane of my favorite foods as a kid, and this is exactly how my mom made it! Easy and directly forward.
05/xviii/2005
I volition NOT swallow liver and am not real addicted of cooking information technology but I volition a couple times a year for my husband. He LOVED this recipe and, for whatsoever reason, it didn't seem to smell every bit offensive to me when i was cooking at as liver usually does! He may actually get liver more than oft at present!
09/15/2013
This is an excellent recipe. I am not a liver fan and my kids would never eat it so when my last i went off to higher, I surprised my husband with this dish. We both enjoyed it and I will make it again! I did buy skilful quality liver from the farmer'southward market fifty-fifty though we are on a upkeep as it was relatively inexpensive. Thanks for sharing!
02/12/2011
Just like grandma'due south.
07/24/2008
Hmmm...how do I review this? I had (note...past tense) a childhood memory of actually liking liver. So when I was given some to cook, I made this. The house smelled wonderful, the onions looked beautiful, but then...I tasted it. It's a strange flavour; I recall if you like livers, this could be a skillful recipe. But even afterwards dousing it with ketchup, no go. So I can't actually say it's a bad recipe since I believe this is all about personal preferences. Just I cannot rave virtually it either.
09/14/2009
Yummy! I like the milk soaking hint. I will make my liver this way from now on.

04/14/2012
Information technology tastes just like my mom'south and I don't believe she soaked hers at all. I only tasted like liver to me. The onions were GREAT (but they e'er are when sauteed), I added curry and used sunflower seeds grinded up every bit a flour since we're grain-free. Only otherwise information technology was only like ok and my DH who says he never had it, never wants it again lol.
10/22/2011

04/21/2013
I take been using this recipe for years. My husband always told me he hated liver until I tried this receipe. I also add green pepper strips to the onions and a dash of paprika to the flour.
02/21/2011
Excellent! If you like liver this recipe is simple and tastes bang-up. We fried the liver in canola oil instead of butter and information technology turned out just fine.
10/10/2011
I've made this recipe 3 times. My husband loves information technology every time. Invited the neighbor over and he barbarous in dearest likewise!
03/08/2009
Outstanding, equally a "home daughter" from Iowa I wasn't also sure if I would similar this. My Mom cooks GREAT Liver & Onions only she must exist out shopping, so I had to revert to a search on the internet. I retrieve even SHE will honey this. I know my married man and sons did!
01/18/2004
yum
12/18/2008
Soaking in milk very good. But all liver is best when topped with sauteed onions and mushrooms only when sauteing them add some soy sauce!!!
02/23/2011
Excellent recipe! Loved information technology immensely.
01/02/2011
We used a lot less flour, yellowish onions (didn't have vidalias), and added 4 cloves of minced garlic. It was So expert!
09/19/2011
Our dogs charge per unit this recipe 4 stars. I have several pounds of liver in the freezer from a beef side. I haven't had it since I was possibly x and I now realize that I exercise not like liver.
09/xv/2013

01/09/2011
I have to swallow liver a couple times because my B12 tanked forth with my atomic number 26 and the doc is trying to raise it with some dietary changes and vitamins. I'm sure the recipe is fine so I gave information technology a four but I'k lamentable. I was reallay hoping this recipe would make information technology better since i have to eat it but information technology didn't I fabricated it with more expensive calves liver, rinsed it soaked information technology in milk a long time and cooked information technology as directed. I'll make information technology this way again because I have to eat it and it is a proficient recipe merely there are no miracles when it comes to liver :o(
01/13/2004
Very good recipes. My family loves information technology. I doubled the onion since it tastes and so skilful with the liver.
05/29/2010
This was the first time I've ever prepared or eaten liver. It was great when served as soon as it was cooked just as left overs it got a niggling tough. Next fourth dimension I'll try to make only what we're going to consume that night. Likewise I think this serves eight rather than 4. I might add a few extra onions equally well.
10/27/2013
This was very expert. I didn't add as much milk to the liver though considering I didn't want to take abroad too much of the liver flavour. Also that, I besides similar my onions extremely caramelized so I left information technology in the pan while the liver cooked every bit well. Also added a tad fleck of lemon juice and table salt&pepper it at the end and it was divine!! Yum yum.
02/27/2004
Liver is never every bit highly-seasoned to the melt as it is to the rest of the family unit, because who wants to eat the stuff after handling it raw? Yuk! That said, I made this recipe with calf's liver, which I usually adopt, and maybe that was a fault (though I dubiousness it), because we all agreed that the liver had very little season and was pretty boring. I'thousand still seqarching for a recipe for liver that's as good every bit I've had in some nicer restaurants. They usually have vinegar in the recipe, and gustatory modality much more than rich and complex than this preparation did.
01/31/2010
Delicious!!!!! the whole family unit loves it. Offset time I have made liver and it was not like chewing on leather, the soaking in the milk and turning once does the trick. Thank you
05/12/2010
Oh, I don't know how to charge per unit this one. I would requite it a one star because I Detest liver and onions but my hubby had been begging me for YEARS to make it. I finally caved and went to the butcher... he said it was the absolute best liver and onions he has always had. This was the easiest and all-time recipe. The liver and onions tasted just as good every bit the all-time I've had at whatever eating house. I've made this with both Vidalia onions and white onions both were expert but I practice recommend the Vidalia. I also Fried some salary which is a personal favorite addition of mine with liver and onions.

I used a regular yellow onion, which turned out fine. To saute the onion, I used 2 tablespoons of Earth Remainder substitute butter spread, just for the 2nd 2 tablespoons of butter to cook the liver in, I substituted salary grease. We liked liver already, but at present my hubby declares that he wants "liver every night!" Information technology was really delicious.
